What Insider build should I install

I’m about to purchase a new Surface Laptop, Copilot+ PC as a Christmas gift for myself as they are on special here in Australia at the moment. I know I should probably wait until the new generation Snapdragon PCs come out next year, but I need a new PC and no doubt they will be more expensive.

Question is what Insider build should I install? I have been running the Canary build for the last few years and it seems to be totally neglected with little, if any, significant updates.

Should I choose Dev or Beta; is there any significant difference? Perhaps I should go back to a plain non-Insider build.
