Last night, Microsoft updated Microsoft Edge on iOS with the same tracking protection functionality it provides on desktop versions of the browser.
Microsoft Edge 44.13.1 was released to the Apple Apps Store on February 23 and provides the following changes:

Tracking prevention. Select a Basic, Balanced, or Strict amount of blocking. You can also make exceptions to allow all trackers on sites you trust. This functionality is still not available in the Android version of the browser.
Sync with the new Edge. This has been available on Android for some time, but iOS users can finally choose whether to sync favorites, passwords, and other data with the new Microsoft Edge or Microsoft Edge Legacy.
Other fixes. Microsoft says it has also made some general bug fixes and performance improvements.
