Just a thought, but have you guys ever considered using Skype for Business to record your podcast? It has gallery view for your side-by-side shots. There's even a broadcast option for live streaming. I think a lot of the technical issues you seem to experience would be easily resolved by just recording to the cloud and then downloading the finished result to post to YouTube.

The only tech challenge we have on a frequent basis are Windows updates that like to chew up CPU and reset my audio controls

After Windows updates at the wrong time did bite me a couple of times I do proactively install updates at times when they won't disturb me. I do this by generally using Windows Update "check for updates" every morning before breakfast and evening before going to bed.

I consider the risk of an update having unwanted side effects lower then the risk of staying exposed to some security hole for which a fix is available.

My desktop automatically does nightly backups (including an image) using "Backup and Restore (Windows 7)" under Windows 10. For my notebook I manually create an image backup before every long trip. All my machines have system restore enabled. So I always have a way back.
